A teasing hint of fall has been in the air every morning this week giving us the itch for all things pumpkin. Raise your hand if you have already or are about to buy the Mrs Meyers pumpkin hand soap (ahem...me) I have to be honest though, even if it were 90 degrees outside, I'd still make pumpkin muffins and this new recipe is my FAVORITE! I found a basic pumpkin muffin recipe on Pinterest and tweaked it just a bit to make these amazingly moist muffins. |
Ingredients for the BEST pumpkin muffins ever:
1 1/2 cups flour (I used Great Day Apple Flour)
1/2 cup sugar (I used white but Xylitol would be great too!)
2 tsp baking powder
1 tsp pumpkin pie spice (or 1/2 tsp each cinnamon and nutmeg)
1/2 cup milk
1/2 cup canned pumpkin
1/2 cup melted butter
1 egg
Streusel ingredients:
1/4 cup brown sugar
2 tbsp flour (I used Great Day Apple Flour)
2 tbsp soft (not melted) butter
Mix all muffin ingredients together until batter is just blended, do not overmix. Pour into muffin cups. Mix together dry streusel ingredients, cut in the butter until the mixture is crumbly. Sprinkle streusel over top of muffin batter. Bake at 375 for 15 minutes (oven times vary, keep an eye on these muffins and take them out as soon as they are finished, still golden, not browned). After muffins have cooled slightly mix together 1/2 cup powdered sugar with enough milk to make a thick (not too runny) consistency. Drizzle over muffins. Enjoy!
